Black Bean, Corn And Quinoa Salad

Ingredients

  • 2 1/2 cups cooked quinoa
  • 1 can of corn or 3 ears
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 2 cups of cooked black beans or 1 15-ounce can (drained and rinsed)
  • 1 cup finely chopped cilantro
  • 1 lime or lemon (use zest and juice)
  • 1 tablespoon of cumin seeds

Instructions

Step 1

Combine all ingredients in a bowl and mix well.

Step 2

Chill for 1 hour before serving.
