Lentil and Veggie Stuffed Peppers

Ingredients

  • 3 bell peppers, halved and de-seeded
  • 1 bell pepper, diced
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 1 zucchini, diced
  • 2 cans of lentils or 2 cups of cooked lentils
  • 1-3 tbsp of latin spice blend or similar seasoning

Instructions

Step 1

Place halved peppers on a baking sheet or casserole dish and preheat oven to 350F.

Step 2

In a large pan on medium heat, cook onion until soft.

Step 3

Add zucchini, diced bell pepper and continue to cook until soft and slightly browned.

Step 4

Add lentils and spices and continue to cook until spices are well mixed.

Step 5

Scoop mixture into halved peppers and bake for 20 minutes.

 

Options:

  • Sprinkle with Nutritional yeast after baking
  • Add cooked brown rice to mixture
  • Add tomato sauce/marinara to casserole dish before cooking peppers
  • try different vegetable combinations
