Spaghetti Squash

Ingredients

  • 1 spaghetti squash
  • 2 tsp extra-virgin olive oil
  • Sprinkle of salt and pepper to taste

Instructions

Step 1

Preheat oven to 400F and line a rimmed baking sheet with parchment paper.

Step 2

Cut the squash in half lengthwise. Use a large spoon to scoop out seeds. (If you find it difficult to cut, you may cook whole squash and scoop out seeds once cooked and cooled) Drizzle with olive oil and sprinkle with salt, then place them cut-side down on the baking sheet.

Step 3

Bake for 40-60 minutes (depending on size of squash), until the cut sides are turning golden and the interior is tender when pieced with a fork.

Step 4

Once squash is finished baking, rake the interior with a fork to make the insides turn spaghetti-like. Serve as desired.

Step 5

Serve with your favorite marinara sauce or serve as a base for a DIY bowl. (see directions)

Note:

Will store well in the fridge for 3-5 days.
