Spinach and Mushroom Black Bean Burrito

Ingredients

  • 1/2 cups cooked black beans or 1 15.5-ounce low-sodium black beans, drained and rinsed
  • 1/2 cup finely diced red onion
  • 2 garlic cloves
  • 2 cups chopped mushrooms
  • 4 cups baby spinach
  • 1 tablespoon nutritional yeast
  • cayenne pepper
  • 4 100% whole-grain tortillas

Instructions

Step 1

In a bowl, mash the black beans with a fork and set aside.

Step 2

Heat 1/4 cup of water in a skillet and add the onion and garlic. Cook, stirring occasionally, until softened, about 5 minutes.

Step 3

Stir in the mushrooms and cook for 3 minutes longer soften.

Step 4

Add the spinach and cook, stirring, until spinach is wilted.

Step 5

Add the mashed black beans and continue to cook, stirring, until the liquid id absorbed. Stir in the nutritional yeast.
